Hot & Spicy, Two Bean Chili

Yields1 Serving
1

Place the pork in the crockpot and add the beer. Cook on
low for 8 to 10 hours (I like to do this overnight).

2

Remove pork from the crockpot (leaving the cooking
juices in the pot) and discard the bones and any large
pieces of remaining fat.

3

Chop the pork into very large chunks (they will break up
as they finish cooking) and return 1 1/2—2 pounds of the
chopped pork to the crockpot juices. Keep any remaining
pork for barbeque sandwiches, tacos, enchiladas, etc.

4

Add the remaining ingredients to the crockpot and mix
well. Cover the crockpot and cook on low for 4 to 8
hours.
