On March 21 & 22, 2020, renowned author and chef, Meredith Leigh, will be teaching a two-day Charcuterie Intensive hosted by Board Member, Seth Wright of Timberhaven farm. Class participants will break down half of a 21-montth-old American Guinea Hog sow which will be provided from Seth’s AGH herd at Timberhaven Farm.
Many of our members have learned all about raising and breeding guinea hogs. But what about learning how to confidently slaughter, butcher, cook, and preserve — by means of curing and smoking — each and every part of the entire animal?
